I'm not entirely sure what LN and VN adaptations means, but I'm going to have to agree with you. This Harem/Highschool Drama thing is kind of getting old.

However, I'm going to be unique and blame Japan's government on this one. Their continued censorship of Manga and Anime (More the former then the later.) drastically impairs their potential to develop characters and romances beyond the typical highschool melodrama. Honestly, I wouldn't be surprised if the entire industry (In Japan.) crashes in a few years.

It shouldn't be (and isn't) a surprise that more recent anime have gradually become more and more stale, especially when compared to older anime in terms of conceptual and thematic execution. That's because (in my opinion.) it's not. I personally believe it's not a coincidence. Just look at network television in the USA, it wasn't until networks (Starting with the premium channels, then gradually trickling down to network television.) decided to PUSH the boundaries (Game of Thrones, Spartacus, Hannibal, Dexter, True Blood, and Walking Dead are but a few examples.) that there was a huge surge in television revenue and viewers.

Once it crashes, hopefully the lawmakers will realize their mistakes and amend their laws. If this isn't the case...well, the Korean market is looking better and better every day.
